You can either cap off the water supply lines at the shut-off valves or plug the flexible water lines while they’re still in use. If you do the latter, you will be able to use your water for drinking, cooking, washing, and other uses.
If you have a water meter, it will tell you how much water is left in your meter. You can use this information to determine the amount of water you need to fill up your tank.

Can you cap a copper water line?
The outside of the end of the pipe and the inside of the cap fitting with steel wool need to be cleaned. Cleanliness is the key to a leak-free soldered joint. Before soldering the pipe and any fittings, they need to be completely clean and free of dirt. Clean and dry your hands before you solder copper pipes.
Use a solder gun to heat the solder until it is hot enough to melt the metal. Then, use the tip of an iron to solder the joint. Be careful not to burn yourself or your fingers. If you do burn your hand, wash it immediately with soap and water and get medical attention.
Can you cap a saddle valve?
If you don’t want to hassle with removing the saddle and the tubing coming off the saddle and you just want to permanently but reliably cap it off, cut the copper coming off the saddle at least 6 inches away from the pipe and then solder it in place.
